Spicy Sour Soup
Ingredients
1 liter of Chicken broth
200 grams of Sliced meat
5 Shiitake mushrooms
2 tablespoons of Rice vinegar
2 tablespoons of Soy sauce
2 tablespoons of Rice flour
2 Eggs
100 grams of Bamboo shoots
200 grams of Tofu
1 ½ teaspoon of Pepper
1 tablespoon of Sesame oil
Chopped scallions
1 pinch of Salt
Preparation
Step 1 : Soak the mushrooms in hot water for 20 minutes to soften them.
Step 2 : Then, drain and cut into fine strips.
Step 3 : In a pot, heat the broth until boiling and add vinegar, soy sauce, and salt to taste.
Step 4 : To thicken the broth, prepare a slurry by mixing rice flour with a little water, then slowly add it to the boiling broth, stirring constantly until the desired consistency is reached.
Step 5 : Beat the eggs in a separate bowl and, carefully, pour them into the hot broth in thin streams, gently stirring so they distribute evenly.
Step 6 : Next, add the mushrooms, bamboo shoots, meat, and tofu, allowing the broth to boil again for about two minutes.
Step 7 : Taste and adjust seasonings if necessary by adding more soy sauce or vinegar.
Step 8 : Finally, garnish with fresh scallions before serving, adding an aromatic and visual touch to the dish.
