Ingredients

1 liter of Chicken broth

60 grams of Firm tofu

60 grams of Dehydrated mushrooms

60 milliliters of White vinegar

2 tablespoons of Soy sauce

1 tablespoon of Grated ginger

2 Chili pepper

2 Garlic cloves

1 Egg

2 teaspoons of Cornstarch

3 tablespoons of Bean sprouts

40 grams of Bamboo shoots

100 grams of Chicken breast

1 teaspoon of Cilantro

2 teaspoons of Sugar

1 teaspoon of Sunflower oil

Preparation

Step 1 : In a bowl with water, soak the mushrooms to hydrate them.

Step 2 : In another small bowl, mix the cornstarch, sugar, soy sauce, vinegar, and cornstarch to create a slurry.

Step 3 : In a wok, pour a teaspoon of oil and sauté the chicken breast for 2 minutes.

Step 4 : Add garlic, chili, grated ginger, sugar, and tofu, then sauté for another 2 minutes.

Step 5 : Add chicken broth, bean sprouts, drained Chinese mushrooms, and bamboo shoots, cooking over low heat for 10 minutes.

Step 6 : At the 5-minute mark, add the chopped chicken and the flour mixture.

Step 7 : Beat the egg and add it to the soup using a fork, forming strands.

Step 8 : If you wish to add soy noodles, blanch them in boiling water for a few seconds and incorporate them into the soup at the end of preparation.
