Pig's Trotter Soup with Soybeans

4 Pig's trotters
6 Dried oysters
6 Tofu pieces
6 Dry Chinese dates
1 tablespoon of Dry white wine
1 pinch of Salt
1 Small piece of ginger
1 teaspoon of MeiJing powder
¾ liter of Boiling water
Preparation
Step 1 : The soybeans were soaked the night before or for at least 8 hours.
Step 2 : The pig's trotters were boiled in water for 20 minutes, cut into large pieces, and the hooves removed.
Step 3 : The dried oysters were soaked in hot water in a pot, brought to a boil, and left to soak for 10 minutes.
Step 4 : The tofu pieces were softened for 30 minutes.
Step 5 : In another pot, a little oil was heated, and large slices of ginger with salt were fried.
Step 6 : Then, the soaked oysters and the pig's trotters, previously marinated with wine, were added.
Step 7 : Frying continued until the pig's trotters turned a golden color, then boiling water was added.
Step 8 : The pot was covered, and the soup was simmered gently for 1 hour and 20 minutes.
Step 9 : Dates, chopped tofu pieces, and soybeans were added, and stewed for another 40 minutes.
Step 10 : The soup continued cooking for an additional 2 hours.
