½ Chicken

3 Codonopsis pilosula

1 handful of Astragalus membranaceus

1 handful of Euryale ferox

1 handful of dried Dioscorea opposita

20 Lycium barbarum

1 handful of Lilium brownii

Preparation

Step 1 : The process begins by heating water in a pot and adding slices of ginger along with cooking wine.

Step 2 : When the liquid comes to a boil, the washed black chicken is added and stirred for about two minutes to seal it.

Step 3 : Then, the chicken is removed, rinsed with cold water, and left to drain.

Step 4 : Next, the medicinal herbs are gently washed and placed in a clay pot along with the chicken.

Step 5 : The pot is filled with cold water, more slices of ginger are added, and it is covered.

Step 6 : The initial cooking is done over high heat to begin forming the broth.

Step 7 : Then, the heat is reduced to low and cooked uncovered for about three hours, ensuring the flavors meld well into the broth.

Step 8 : About 30 minutes before finishing, the Lycium barbarum (goji berries) are added, allowing their properties and flavor to infuse into the broth.

Step 9 : Finally, the salt level is adjusted, and optionally, monosodium glutamate can be added to enhance the flavor.
