Ingredients

200 grams of Pork cut into strips

2 tablespoons of Hoisin sauce

1 teaspoon of Oyster sauce

1 teaspoon of Soy sauce

30 grams of Dehydrated shiitake mushrooms

300 grams of Chopped spinach

Fine wheat noodles

1 ½ liter of Chicken broth

60 milliliters of Soy sauce

1 teaspoon of Sugar

1 Boiled egg, halved

Preparation

Step 1 : To prepare this delicious soup, first marinate the pork in a mixture of hoisin sauce, oyster sauce, and soy sauce.

Step 2 : Meanwhile, hydrate the mushrooms in 150 ml of boiling water for 20 minutes, strain and slice them, reserving the liquid.

Step 3 : In a pot with water and a pinch of salt, blanch the spinach for 3 minutes, then strain and set aside.

Step 4 : In another pot of boiling water, cook the noodles for 3 minutes, drain and set aside.

Step 5 : In a wok with a little hot vegetable oil, sauté the pork for 5 minutes, then remove and set aside.

Step 6 : Next, pour the broth and 500 ml of water into the wok and bring to a boil.

Step 7 : Add the mushrooms and the reserved liquid, soy sauce, sugar, and cook for 2 minutes before adding the broccoli.

Step 8 : To serve, place the noodles in each bowl, pour the soup over them, and add the pork and half a boiled egg.

Step 9 : Finally, sprinkle finely chopped cilantro and chili to taste.
