Fish Meatball Soup
Ingredients
300 grams of Chinese noodles
600 grams of Boneless hake
75 milliliters of Water
2 tablespoons of Flour
3 Egg whites
3 Grated garlic cloves
1 tablespoon of Crushed fried scallions
1 Chopped celery stalk
1 tablespoon of Soy sauce
2 liters of Fish broth
1 tablespoon of Powdered ginger
2 Sliced onions
2 tablespoons of Sunflower oil
6 Chopped garlic cloves
1 Lemon grass stalk
1 pinch of Ground nutmeg
150 grams of Mushrooms
300 grams of Firm tofu in triangles
1 teaspoon of Sesame oil
Lemon slices
Chili sauce
2 tablespoons of Salt
½ teaspoon of Pepper
Preparation
Step 1 : The preparation begins by blending the hake with cold water into a smooth paste using a blender or Thermomix.
Step 2 : This paste is transferred to a large container where flour, egg whites, grated garlic, crushed scallions, chopped celery, salt, and pepper are added.
Step 3 : All ingredients are mixed carefully until a homogeneous mixture is obtained.
Step 4 : Then, small balls are formed from the fish mixture, and these are carefully placed into boiling fish broth.
Step 5 : They are cooked until the balls float and are completely cooked.
Step 6 : The cooked meatballs are set aside on a separate plate, while the broth is prepared for the soup.
Step 7 : The broth is brought to a boil in a large pot along with the ginger and onion.
Step 8 : In a separate skillet, heat oil and brown the garlic until golden.
Step 9 : This golden garlic is added to the broth to give it aroma.
Step 10 : Next, white pepper, nutmeg, lemon grass, tofu, and the fish balls are added to the broth, allowing everything to boil together.
Step 11 : To adjust the flavor, season with salt, sugar, and sweet soy sauce according to preferences.
Step 12 : Once the soup reaches a boil, drizzle a few drops of sesame oil and turn off the heat.
Step 13 : To serve, place Chinese noodles at the bottom of bowls, followed by fish balls, tofu triangles, and the meatballs.
Step 14 : Finally, garnish with celery, fried scallions, lemon slices, and add chili sauce to taste.
