4 Chicken carcasses

½ kilogram of Chicken wings

5 Slices of ginger

4 Chopped scallions

2 Garlic cloves

5 Dried licorice roots

1 teaspoon of Sichuan peppercorns

1 tablespoon of Shaoxing wine

Soy sauce

5 Red chilies

125 milliliters of Vegetable oil

60 milliliters of Rice vinegar

1 teaspoon of Sugar

250 grams of Dried rice noodles

150 grams of Pickled Chinese vegetables

100 grams of Chicken breast slices

100 grams of Pork loin slices

100 grams of Ham slices

100 grams of Fish slices

4 Quail eggs

2 Chopped bok choy

4 Dried shiitake mushrooms

3 Chopped scallions

Cilantro

Chili and garlic sauce

Preparation

Step 1 : First, in a large pot, place the chicken carcasses, wings, ginger, scallions, garlic, licorice roots, and Sichuan peppercorns.

Step 2 : Cover with cold water and bring to a boil.

Step 3 : During cooking, remove the foam that forms on the surface to keep a clear broth.

Step 4 : Reduce the heat to very low and let it cook for about 2 to 3 hours.

Step 5 : Once cooked, strain the broth and keep it warm for later use.

Step 6 : Meanwhile, prepare a paste by blending the chilies and garlic until coarse.

Step 7 : In a skillet, heat oil and sauté this paste for about 2 minutes.

Step 8 : Add vinegar, sugar, water, and salt, and bring to a boil for about 8 to 10 minutes.

Step 9 : Then, let the mixture cool.

Step 10 : For the noodles, boil them in salted water until al dente.

Step 11 : Drain and set aside for later.

Step 12 : Reheat the broth, adding Shaoxing wine and soy sauce, and bring to a boil.

Step 13 : In each large bowl, place the pickled vegetables, finely sliced chicken, pork, ham, fish, quail eggs, bok choy, shiitake, scallions, and chives.

Step 14 : Pour the boiling broth over these ingredients, allowing the heat to cook the meats and vegetables instantly.

Step 15 : Finally, add the noodles to each bowl.

Step 16 : To serve, garnish with fresh cilantro, a chili and garlic sauce, and a dash of sesame oil to enhance the flavors.
