Ingredients

2 cans of White asparagus

2 Chicken breasts

1 Chicken carcass

5 Eggs

2 Ham slices

¾ cup of Cornstarch

2 teaspoons of Salt

1 teaspoon of Mei-jing

4 cups of Boiling water

Preparation

Step 1 : Start by heating 1 tablespoon of oil in a large pot and fry the salt.

Step 2 : Then, pour in 1 gallon of water and add the chicken carcass.

Step 3 : Cover the pot and let it simmer for 3 hours.

Step 4 : Once ready, strain the broth into another pot, set aside 1 cup of the broth, and cool it in the refrigerator.

Step 5 : Proceed to open the can of asparagus and reserve ½ cup of the juice.

Step 6 : Slice the asparagus with a sharp knife.

Step 7 : Grind the chicken breasts and the pulp very well, then place in a pot and gradually add the previously cooled cup of chicken broth.

Step 8 : Keep mixing and remove any tendons you find.

Step 9 : Beat the egg whites to stiff peaks and incorporate them into the chicken pulp.

Step 10 : Reserve this mixture.

Step 11 : Dissolve the cornstarch in cold water, and when the broth begins to boil, add the asparagus pulp and a teaspoon of mei-jing powder.

Step 12 : Finally, gradually add the dissolved cornstarch, stirring carefully.

Step 13 : Let it simmer gently for 20 minutes, add salt to taste, and incorporate the chicken and egg white mixture.

Step 14 : Then turn off the heat and allow the mixture of chicken pulp and egg whites to finish cooking in the soup's heat for 10 minutes.

Step 15 : Before serving, grind the ham and cover the soup with the ground ham.

Step 16 : Ready to enjoy!
