Ingredients

100 grams of Flour

½ teaspoon of Alkaline water

50 milliliters of Golden syrup

30 milliliters of Vegetable oil

420 grams of Lotus seed paste

1 teaspoon of Cooking wine with rose flavor

6 Egg yolks

1 Egg yolk

2 tablespoons of Egg whites

Preparation

Step 1 : To prepare the mooncakes, first mix the alkaline water, golden syrup, and oil until smooth.

Step 2 : Then, gradually add the sifted flour until a dough forms.

Step 3 : Wrap this dough in plastic wrap and let it rest for 3 hours.

Step 4 : Meanwhile, separate the egg yolks from the whites and steam the yolks for 10 minutes over medium heat.

Step 5 : Once cooked, season the yolks, let them cool, and cut them in half.

Step 6 : Next, place the yolks in a dish with the wine, remove them, and dry with paper towels.

Step 7 : Preheat the oven to 180°C, divide the dough into 12 equal parts, forming a ball with each, and do the same with the lotus seed paste.

Step 8 : Set aside.

Step 9 : To assemble the mooncakes, make a hole in the lotus seed paste ball, place half a yolk in the center, and completely cover with more lotus seed paste.

Step 10 : Then, enclose the ball with the dough, repeating the process with all balls until all the mooncakes are formed.

Step 11 : Grease the mold and place the mooncakes inside.

Step 12 : Bake for 12 minutes.

Step 13 : While baking, mix the egg whites with the yolk and strain the mixture.

Step 14 : Once the mooncakes are out of the oven, brush them with egg wash and bake again until golden.
