Glutinous Rice Balls
Ingredients
500 grams of Long-grain glutinous rice flour
½ cup of Boiling water
1 cup of Room temperature water
Peanut filling with black sesame
2 cups of Water
45 grams of Brown block sugar
1 tablespoon of Dried goji berries
1 ½ Dried osmanthus flowers
Preparation
Step 1 : Pour the rice flour and boiling water into a bowl.
Step 2 : Mix well and let sit for 10 minutes.
Step 3 : Add the remaining water, mix, and knead until obtaining a smooth dough.
Step 4 : Cover and let rest for 5 minutes.
Step 5 : Then, divide the dough into pieces of approximately 17 grams and form 10-gram balls with peanut and sesame filling.
Step 6 : Form discs with the dough, place the filling in the center, wrap the dough around the filling, and seal with small pinches.
Step 7 : Then, coat with flour and set aside on a plate.
Step 8 : Cook the rice balls in boiling water for 5 minutes, and once they float, leave them for an additional 2 minutes in the fire.
Step 9 : In a small pot, combine 2 ½ cups of water, brown sugar, ginger, and berries, and simmer until forming a syrup.
Step 10 : Finally, serve the rice balls and pour the syrup over them.
