Ingredients

310 grams of Soybeans

Water to soak the soybeans in

8 cups of Water

1 tablespoon of Cornstarch

1 teaspoon of Edible white clay

280 grams of Sugar

2 tablespoons of Very thinly sliced ginger

2 Lemon slices

Preparation

Step 1 : Wash the soybeans and place them in a basin, covering them with water three times their height.

Step 2 : Let them soak for 8 hours or until they double in size.

Step 3 : After soaking, drain the soybeans and blend them well with 6 cups of water.

Step 4 : Strain the resulting liquid through a cloth and reserve the pulp for another recipe.

Step 5 : To the obtained soy milk, add ½ cup of water and bring to a gentle boil, stirring constantly until it boils.

Step 6 : Remove from heat and discard the foam.

Step 7 : In ½ cup of water, mix cornstarch and edible white clay. Add this mixture to the hot soy milk and return to heat.

Step 8 : Turn off the heat. Without stirring the pot, cover it and let the douhua rest for 30 minutes.

Step 9 : Meanwhile, prepare a syrup in another pot with sugar, 1 cup of water, and ginger, cooking for 3 minutes, then add lemon slices.

Step 10 : Remove the foam from the douhua and pour the syrup over it.

Step 11 : Optionally, sprinkle with chocolate or ground sesame before serving.
