Ingredients

2 Dried black mushrooms

900 grams of Frozen fish fillets

1 teaspoon of Salt

1 Scallions

2 Slices of fresh ginger

2 tablespoons of Sherry

2 tablespoons of Smoked ham

cup of Green bell pepper

1 tablespoon of Pepper

2 Slices of ginger root

cup of Bamboo shoots

½ Shallot slice

Oil

Flour

2 tablespoons of Oil

½ cup of Chicken broth

4 tablespoons of Sugar

4 tablespoons of Vinegar

1 tablespoon of Soy sauce

2 tablespoons of Cornstarch

2 tablespoons of Water

Preparation

Step 1 : To begin, hydrate the mushrooms and proceed to clean and descale the fish, making sure to leave it whole.

Step 2 : Then, season the fish inside and out with salt, and grind the scallions and ginger root, spreading them over the fish.

Step 3 : Subsequently, drizzle the fish with sherry and let it rest for 20 minutes.

Step 4 : While the fish rests, grind the ham, green bell pepper, remaining ginger root, and the hydrated mushrooms.

Step 5 : Slice the bamboo shoots and remaining shallots.

Step 6 : In a pan with hot oil, fry the previously floured fish for about 3 minutes until cooked through.

Step 7 : Once ready, place on paper towels to remove excess oil.

Step 8 : Fry the fish again until crispy and golden, then remove and keep warm.

Step 9 : In the same hot oil, add the ham and chopped vegetables, mix and fry for 2 minutes.

Step 10 : To prepare the sauce, mix the broth, vinegar, and soy sauce in the same pan and bring to a boil.

Step 11 : Separately, dissolve the cornstarch in cold water until forming a thick paste to add to the previous mixture.

Step 12 : Return the ham and vegetables to the sauce just to heat through, and finally pour this mixture over the fish.
