Ingredients

½ Roast chicken

1 tablespoon of Ground ginger

4 Chine mushrooms

12 Gum jum

¼ cup of Wun yee

½ cup of Hot water

1 tablespoon of Sherry

1 tablespoon of Soy sauce

¼ teaspoon of Salt

¼ teaspoon of Pepper

Preparation

Step 1 : Start by mixing the sugar, salt, pepper, ginger, soy sauce, and sherry well.

Step 2 : Then, immerse the chicken in this mixture.

Step 3 : The mushrooms, 'cloud ears,' and 'gum jum' should be soaked and cleaned.

Step 4 : Next, cut the mushrooms in half and prepare the other ingredients.

Step 5 : In a skillet with a little hot oil, brown the chicken.

Step 6 : Once browned, add the soaked ingredients along with 1/2 cup of boiling water.

Step 7 : Bring to a boil, cover the skillet, reduce the heat, and let cook for 40 minutes.

Step 8 : After cooking, cut the chicken into 3/4-inch slices.

Step 9 : Remove the mushrooms, 'gum fum,' and 'wum yee' from the skillet to cut and place on the serving tray.

Step 10 : Then, arrange the chicken slices on top.

Step 11 : To prepare the sauce, mix 1 tablespoon of cornstarch with a little water, 1/4 teaspoon of sugar, 1 tablespoon of soy sauce, and the juice from the chicken.

Step 12 : Heat this mixture over low heat until it thickens.

Step 13 : Finally, pour the sauce over the chicken and serve immediately.
