1 Small Duck

2 Star Anise

1 Small piece of Chinese Cinnamon

½ Garlic Clove

1 pinch of Fennel Seeds

4 Sichuan Peppercorns

100 milliliters of Jeruzale Wine

1 pinch of Red Chili

1 Fresh Ginger Piece

1 pinch of Salt

2 tablespoons of Soy Sauce

3 tablespoons of Honey

½ Cucumber

½ Scallion

Preparation

Step 1 : Wash and thoroughly clean the duck inside and out.

Step 2 : Place water in a large pot and bring to a boil, then blanch the duck for 1 minute.

Step 3 : Remove the duck from the water and let it cool.

Step 4 : Carefully peel the skin from the duck using a straw to blow between the skin and the meat, ensuring it stays intact and properly detached.

Step 5 : Pierce the end of the duck's neck with a metal hook to hang it, placing a saucepan underneath.

Step 6 : Peel and finely chop the ginger; you can also grate it.

Step 7 : In a pot, pour in water and add honey, chopped ginger, soy sauce, star anise, Chinese cinnamon, fennel seeds, chili powder, and wine.

Step 8 : Bring to a boil and remove from heat once it starts boiling.

Step 9 : While the mixture is still hot, pour it over the hanging duck, ensuring it is well coated.

Step 10 : Once the skin is soaked with the sauce, the duck will turn a chocolate brown tone.

Step 11 : Hang the lacquered duck in a cool, dry place for 5 hours.

Step 12 : After resting, the duck’s skin should be dry and firm to the touch.

Step 13 : Place the duck on a rack with a baking dish underneath containing 2 cups of water.

Step 14 : Bake at 240°C for 20 minutes, then reduce the temperature to 180°C and bake for 1 hour.

Step 15 : At the end of cooking, remove the duck from the oven.

Step 16 : Cut the scallions into thin sticks and soak them in a bowl of water for 10 minutes.

Step 17 : Then, place them on paper towels to dry.

Step 18 : Also, cut the cucumber into sticks.
