Ingredients
120 grams of Ground pork
200 grams of Wheat noodles
15 milliliters of Soy sauce
15 milliliters of Shaoxing rice wine
1 Garlic clove
5 grams of Ginger
Peanuts
50 grams of Pickled mustard greens
30 milliliters of Water
15 milliliters of Chinese black vinegar
30 milliliters of Sichuan-style chili oil
1 gram of Ground Sichuan pepper
1 pinch of Sugar
1 pinch of Monosodium glutamate
30 grams of Sesame paste
Preparation
Step 1 : Start by chopping the ginger, garlic, Chinese chives, and bok choy in half, and set them aside.
Step 2 : In a skillet or wok, heat a little oil and add the chopped ginger, along with the garlic and pickled mustard greens; sauté for about a minute until fragrant.
Step 3 : Then, add the ground pork and cook over medium-high heat, stirring until well browned.
Step 4 : Add soy sauce and Shaoxing wine, and continue cooking for a few more minutes, allowing the liquid to reduce and almost evaporate.
Step 5 : Meanwhile, bring water to a boil in a large pot.
Step 6 : Once boiling, cook the noodles according to package instructions.
Step 7 : In the last minute, add the vegetables, starting with the bok choy, to blanch them together with the noodles in the same water.
Step 8 : Once cooked, reserve one or two tablespoons of the cooking water and drain the noodles and vegetables.
Step 9 : Prepare the base sauce in a bowl by mixing sesame paste, soy sauce, black vinegar, chili oil, sugar, Sichuan pepper, and a little MSG.
Step 10 : To make mixing easier, add one or two tablespoons of the reserved cooking water and stir until the sesame paste dissolves completely.
Step 11 : To serve, place the sauce in individual bowls, add the cooked noodles on top, and distribute the pork over each bowl.
Step 12 : Finally, garnish with crushed peanuts, chopped Chinese chives, and blanched bok choy.
