Ingredients

200 grams of Tofu

2 Eggs

8 Rice paper sheets

Flour

Oil

Cashew nut

Spinach leaves

Cilantro leaves

100 grams of Panko breadcrumbs

Pepper

2 tablespoons of Mayonnaise

1 tablespoon of Soy sauce

3 tablespoons of Sweet chili

Mint leaves

Preparation

Step 1 : Place the rice paper sheets in cold water to hydrate until they become flexible.

Step 2 : Meanwhile, mix the mayonnaise with soy sauce and set aside in a container.

Step 3 : Cut the tofu into approximately 2x2 cm cubes and then coat them in flour, removing any excess.

Step 4 : Next, pass the cubes through beaten eggs and panko breadcrumbs to achieve a crispy coating.

Step 5 : In a skillet with hot oil, fry the tofu cubes until golden and crispy; then place them on absorbent paper to remove excess oil.

Step 6 : Once the rice paper sheets are hydrated, carefully drain them and gently pat dry with paper towels.

Step 7 : Then, place them on a flat plate.

Step 8 : On each sheet, distribute spinach, cilantro, and fresh mint leaves.

Step 9 : From there, add a drizzle of mayonnaise with soy sauce, some sweet chili sauce, cashew nuts, and fried tofu cubes.

Step 10 : Carefully roll up the rice paper sheets to form tightly sealed rolls.

Step 11 : Finally, cut the rolls into portions and serve decorated with additional sauce, mayonnaise, cashew nuts, and fresh herbs like cilantro and mint, giving a final touch of freshness and flavor.
