To prepare Shumai, mix soy sauce, rice wine vinegar, sesame oil, garlic, ginger, and sugar in a bowl.
Then, combine this dressing with prawns, chicken, dried shiitakes, scallions, garlic, ginger, cornstarch, pepper, sugar, sesame oil, and oyster sauce.
The mixture is placed in the center of the dumpling wrapper, pressed lightly, and steamed for 15 minutes.

Ingredients
2 tablespoons of Soy sauce
3 tablespoons of Rice wine vinegar
1 tablespoon of Sesame oil
3 Cloves of garlic
1 tablespoon of Grated ginger
½ teaspoon of Sugar
300 grams of Chopped chicken breast
150 grams of Prawns or shrimp, peeled, deveined, and chopped
8 grams of Dried shiitake mushrooms, soaked, drained, and chopped
1 cup of Scallion, chopped
1 teaspoon of Grated garlic
1 teaspoon of Grated ginger
4 teaspoons of Cornstarch
¼ teaspoon of White pepper powder
1 teaspoon of Sugar
1 tablespoon of Sesame oil
1 tablespoon of Oyster sauce
25 Wonton wrappers
1 Small grated carrot
Preparation
Step 1 : In a bowl, combine 2 tablespoons soy sauce, 3 tablespoons rice wine vinegar, 1 tablespoon sesame oil, 3 garlic cloves, 1 tablespoon ginger, and ½ tablespoon sugar.
Step 2 : Mix well and set aside.
Step 3 : Combine the prawns, chicken, dried shiitakes, scallions, garlic, ginger, cornstarch, pepper, sugar, sesame oil, and oyster sauce.
Step 4 : Mix the filling until smooth and homogeneous.
Step 5 : Moisten the edges of the dumpling wrappers with water and place a portion of the filling in the center of each wrapper.
Step 6 : Gently press and add more filling until reaching the top, smoothing the surface with a teaspoon.
Step 7 : Lightly oil a steamer basket and steam the shumai for 15 minutes.
