Shrimp Dim Sum

In a laborious and meticulous process, the shrimp shells are combined with onion and tomato in a skillet, cooked until the vegetables reach their ideal point.

After adding the wine and broth, the mixture transforms into an essence that imparts an intense marine flavor to the final dish.

Meanwhile, in another container, scallions and fresh chili peppers give way to chopped shrimp, creating a paste loaded with textures and irresistible aromas.

Ingredients

½ kilogram of Shrimp

3 Ripe tomatoes

½ Parsley bunch

3 Shallots

1 cup of Broth

1 pinch of Salt

Oil

400 grams of Scallion

100 centiliters of Rice wine

1 Fresh chili

1 teaspoon of Cayenne pepper

1 Wonton wrappers

Preparation

Step 1 : In a skillet, place the shrimp shells, onion, and tomato, and sauté until the vegetables are cooked.

Step 2 : Add the wine and broth, and cook for 15 minutes.

Step 3 : Then, blend the mixture, strain, and reserve the shrimp essence.

Step 4 : In another skillet, sauté the scallion and fresh chili, then add the chopped shrimp.

Step 5 : Remove from heat, adjust salt, and gradually add the shrimp essence until a thick, consistent paste forms.

Step 6 : Let the mixture cool.

Step 7 : Moisten the edges of the wonton wrappers, place the filling in the center, gather the corners, and twist to seal.

Step 8 : Place a sheet of parchment paper in the steamer, arrange the dim sum on top, and steam until the dough becomes transparent.

Step 9 : Once cooled, brush with oil and bake at 180°C to golden perfection.
