Ingredients

100 grams of Judas Ear Mushrooms

1 Julienned onion

1 Julienned carrot

3 Chopped garlic cloves

1 teaspoon of Chili flakes

2 tablespoons of Olive oil

3 tablespoons of Toasted sesame seeds

3 tablespoons of Rice vinegar

2 tablespoons of Mirin

6 tablespoons of Soy sauce

2 tablespoons of Brown sugar

3 tablespoons of Sesame oil

1 pinch of Salt

Preparation

Step 1 : The mushrooms known as "Judas ear" should first be hydrated in plenty of cold or hot water, allowing them to swell and increase up to ten times their original volume.

Step 2 : Once hydrated, place them in a pot with boiling water and cook for approximately 10 to 20 minutes until tender.

Step 3 : Then, rinse carefully with cold water and drain very well to remove excess moisture.

Step 4 : Meanwhile, sauté the julienned onion, julienned carrot, and chopped garlic in one tablespoon of olive oil until the vegetables are tender and fragrant.

Step 5 : In a separate bowl, prepare the dressing by mixing rice vinegar, mirin, soy sauce, brown sugar, sesame oil, and a pinch of salt, whisking until smooth.

Step 6 : Once the sautéed vegetables and cooked mushrooms are ready, combine them in a bowl with the dressing, mixing gently to absorb the flavors.

Step 7 : Finally, sprinkle toasted sesame seeds on top and let the salad rest for at least one hour before serving.

Step 8 : This resting time helps intensify the flavors and ensures the salad is at its best for enjoyment.
