French fries cut into strips are a classic of Chinese cuisine, perfect for sharing with loved ones.
These potatoes are crispy, with a sweet and sour flavor and a mild spicy kick thanks to a special seasoning with vinegar and Sichuan peppercorns.
The key to achieving that perfect texture is to wash the potatoes well to remove excess starch and use vinegar during cooking, which makes them crispier and more flavorful.
They are a perfect accompaniment for any meal or a different and delicious snack.

1 pound of Russet Potato
½ Bell Pepper
2 Dried Chiles
2 Cloves of Garlic
1 ½ tablespoon of Vinegar
1 teaspoon of Salt
2 teaspoons of Sugar
1 teaspoon of Sichuan Pepper Oil
Preparation
Step 1 : First, wash the potato very well to remove excess starch, and if desired, peel it.
Step 2 : Next, cut the potato into thin, uniform strips so that the cooking is even.
Step 3 : In a deep skillet, heat enough oil over medium-high heat and, in batches, fry the potatoes until golden and crispy.
Step 4 : Remove from the oil and place on absorbent paper to remove excess grease, then set aside.
Step 5 : Meanwhile, in a small bowl, prepare the seasoning by mixing vinegar, salt, sugar, and Sichuan pepper oil.
Step 6 : In a separate pan, sauté the chopped garlic, dried chiles, and pepper strips over medium heat until fragrant.
Step 7 : Then, combine the fried potatoes with the seasoning and aromatic ingredients, gently mixing so that the potatoes absorb the flavor well.
Step 8 : Finally, the crispy, flavorful strips are served to enjoy their texture and their sweet, sour, and spicy taste.
