Ingredients

½ kilogram of Pork belly with skin

10 grams of Salt

3 Bay leaves

1 Lemon zest

1 tablespoon of Pepper

Preparation

Step 1 : First, the bay leaf, pepper, and lemon zest will be crushed to prepare a marinade; then, it will be mixed with the salt.

Step 2 : Using this mixture, the entire piece of pork belly will be rubbed and left to marinate in the fridge for at least two days.

Step 3 : After this time, the pork belly will be taken out of the marinade, lightly rinsed to remove excess salt, and very well dried with paper towels.

Step 4 : The meat will be wrapped in aluminum foil and placed in a preheated oven at 150°C, where it will cook for approximately two hours.

Step 5 : Once cooked, it will be cooled and, with the skin side down, a weight will be placed on it, allowing it to rest for at least two hours to remove excess fat and achieve a firmer texture.

Step 6 : To achieve an even and crispy skin, the entire surface will be pricked with toothpicks.

Step 7 : Before serving, a skillet will be preheated over medium heat, and the pork belly will be placed with the skin side down.

Step 8 : On top, baking paper and a weight will be placed, letting it fry slowly for about 30 to 40 minutes until the skin becomes crispy.

Step 9 : Finally, it will be cut into cubes and enjoyed for its intensely savory aroma and crispy texture, perfect to accompany with mustard, soy sauce, or other preferred sauces.
